Insolito Restaurant

New Restaurant on SkyBlue Mallorca: Insolito in Santa Catalina.

We love the bustling area of Santa Catalina, it never fails to produce even more culinary surprises. Insolito Restaurant is no exception. This establishment is run by Frenchman, Patrick, and serves to different cuisine types simultaneously; International (with French influences) and authentic Thai. There is no fusion of the two.

Thai Chef creates authentic and colourful Thai dishes, as well as some very fine international cuisine, including meats cooked the French way and other French bistro specialties.

This is a great place to go for a drink too; there is an extremely well stocked bar, featuring premium brandies and other liquers.

Calle Fabrica, Santa Catalina


Here’s a shot we took recently of Calle Fabrica, Santa Catalina. The street is now fully pedestrianised, and of course has been duly decorated for the Festive Season with Christmas lights. We think the idea to make Calle Fabrica traffic-free is a great one and that the whole area will notice a boost thanks to the decision.

People love pedestrian only streets. They usually attract cafeterias and restaurants and a great ambience. People can stroll down the street and have time to look in shop windows and choose a great restaurant to eat at. Santa Catalina with its popular market and many restaurants is already a bustling area and projects like these give it a modern touch which will no doubt keep the area alive and kicking.

Chef: Claudio Vargas

Claudio Vargas is the Chef at the new Esencia Restaurant located in Santa Catalina, Palma de Mallorca.

At Esencia he works with cuisines from all over the world and combines them to create dishes with sophisticated flavours which never fail to surprise.

‘The important thing is not to change or modify the raw material and products. This is fundamental for me.’ says Claudio.

Claudio was born in Chile and comes from a family with a long history in the restaurant business

Chef: Ronny Portulidis

This young Greek-German Chef is co-owner and Head Chef at Duke Restaurant, a trendy and relatively new restaurant in the bustling area of Santa Catalina in Mallorca.

Ronny‘s first job in Mallorca was working alongside Marc Fosh at Read’s Hotel and at Fosh Food in Palma and before arriving on the island he worked at well known and exclusive restaurant and hotels in London, Germany and Greece.

At Duke he creates ‘cross cultural cuisine for global nomads’ which comes highly recommended!

Essencia Restaurant


Essencia Restaurant in Santa Catalina is a new small, but cosy restaurant which is offering clients a few surprises.

The Chef, Claudio Vargas likes to combine flavours from lots of different cultures and cuisines and the result is a cuisine which is full of flavour and character and which never fails to surprise.

Essencia allows young artists to exhibit their work on its walls and the cuisine varies according to the type of art they are exhibiting at the time.

All of this is complemented by cocktails made with flair by the bar man Hector Riquelme. Try the Pamjy cocktail, which is a refreshing mixture of Pisco, Malibu, sweet and sour lemon and mango foam.
