Gin & Tonic Matching Menus by Marc Fosh

Gin & Tonic is seriously in at the moment, and more and more people are enjoying the delicate flavours of premium gins and tailor made gin & tonics.

But have you ever thought of combining different gin & tonics with your food? Chef Marc Fosh and his team at Misa Braseria in Palma has done just that and present a series of gin & tonic evenings during February and March in Palma de Mallorca.

Joan Marc Restaurant in Inca

One evening just before Christmas, I went to meet Joan Marc Garcias Amer, a Mallorcan Chef I had already heard a lot about, at his newly opened restaurant in Inca.

Joan Marc is well known for being a creative Chef who is at once very true to the local produce available on the island; he supports the slow food movement and gained a brilliant reputation whilst working at 3|65 Restaurant in Pollensa.

He always knew he would eventually open his own establishment, so when one became available on the square in Inca he grew up on and played on as a child, he jumped at the opportunity.

Joan Marc has the support of a loving family and together they have refurbished the restaurant following a very natural and welcoming design. Key features are the real tree trunks which line the walls from floor to ceiling, and which make you feel at one with the trees in the centre of the square, and the handmade menus which have been made by a traditional basket weaver.

The menu changes according to the season and the produce available. Specialties include authentic Mallorcan dishes which have been recreated with Joan Marc’s personal touch and with home-grown produce from the family’s vegetable garden.

We think Inca was in need of a restaurant like Joan Marc, and we are sure you will agree that’s it’s worth a visit.

Mallorca Food at Christmas

Mallorcan Turrón

Like all the significant festivities of the annual calendar, Christmas in Mallorca has its own important gastronomic traditions. Christmas has been developing and changing in Mallorca over the years, but when it comes to food some very strong customs are still prevalent and are passed on from parents to children.

Christmas Eve is a very significant evening in Mallorca, just as in the rest of Spain. The custom is to go to Church at midnight for what is known as the ‘Cockerel’s Mass’ to bring in the day of the birth of Christ. On the way home from the service it is traditional to have a hot chocolate and some Mallorcan ensaimadas.

Lunch on Christmas Day is a gastronomic feast; the meal starts with a ‘Sopa de Navidad’ or ‘Christmas Soup’, which consists of turkey broth with pasta, liver and boiled eggs in it; next is boiled turkey with vegetables and then a roast pork with crackling and ‘patató’ or roast new potatoes. For dessert, a tray of different ‘turrón’ is prepared. Turrón is a sweet traditionally based on almonds and comes in many different varieties, but the typical Mallorcan turrón is a thin version with almond paste in between sheets of rice paper or ‘neulas’. The turrón can be accompanied by a ‘Coca de Nadal’ or Christmas cake which is similar to the coca de patata which is so typical of the village of Valldemossa, but is bigger and has aniseed in it. Almonds, and indeed all dried fruits have a very prominent role throughout all the Christmas season, both in the form of ‘turrón’ and marzipan as on their own. Mallorca Fruits is a local producer of turrón made using only locally grown almonds. The meal is usually accompanied by a good wine and a glass of cava.

The next day, the 26th of December, is also a feast day in Mallorca, and families usually get together again to enjoy the leftovers of the previous’ day’s lunch.

Two new Michelin Stars for Mallorca

We are thrilled to report that our beloved island of Mallorca has been awarded two new Michelin stars!!

Jardin Restaurant in the Port of Alcudia (Chef Macarena de Castro) and Es Fum Restaurant in Costa d’en Blanes Hotel St Regis Mardavall (Chef Thomas Kahl) have both been awarded stars in the 2012 edition of the Michelin Red Guide.

Any of you Mallorcan foodies out there will surely have heard of these two restaurants; they are two gems and offer a gastronomic experience which is well within Michelin star standards.

So congratulations to Jardin, Es Fum and their hard working teams!!

Gourmet Christmas Presents in Mallorca

Carlo Petrini visits Mallorca

Carlo Petrini the founder of Slow Food International and famous food author, recently visited Palma to present a keynote speech at Es Baluard museum.

SkyBlue Mallorca representatives were amongst the many people who went to hear Carlo’s passionate speech.

Carlo was named a ‘European Hero’ in 2008 by TIME magazine and was included in The Guardian newspaper’s list of ‘The 50 People Most Likely to Save the World’.

Carlo has inspired people the world over to begin supporting local producers and to change the way they think about food. Carlo asked the Palma public to respect their food and to take time out to cook food with family and friends.

New awards for Jose Luis Ferrer Winery

Jose Luis Ferrer Wine Estate, comes away with more awards at the  ”Mezquita de Córdoba”.

This year marked the XVI edition of the “Mezquita de Córdoba” 2011 awards.

The “Mezquita de Oro”  was awarded to two of Jose Luis Ferrer’s wines, the CRIANZA 2008 and the VERITAS DOLÇ 2010.

The Crianza 2008 is well known for its traditional flavour and for being an icon of Mallorca, based as it is on the local variety Mantonegro. Veritas Dolç 2010, is a fresh and innovative wine, made with the white variety of Moscatel grape “Grano Menudo”.

Yes, it is coming up to that time of year again… and to get you into the spirit of things Chef Tomeu Caldentey at Es Moli den Bou in Sa Coma is once again running his Christmas themed cookery courses.

Over a three day course, Tomeu takes you through a Christmas Cooking workshop after which you will come away armed with all the recipes and experience you need to dazzle your family and friends with your cooking this Christmas.

There are three slots to choose from, all taking place in November, and bookings must be made before the 31st of October. Don’t forget that Tomeu Caldentey is a Michelin starred Chef, so this is a truly unique opportunity.

Chef Jordi Calvache launches Unbar D’Calvache Restaurant, a new concept at Poligono Can Valero.

Tasca de Blanquerna wins the top prize in TaPalma 2011

Tasca de Blanquerna, one of the Marc Fosh Restaurant Group, has been rewarded with the top prize in TaPalma 2011, Mallorca’s yearly tapas fair & competition.

The “TaPalma de Oro” was awarded to Tasca for the best Tapa “Slow cooked Iberian Pork with almond “Torrija” & soller orange compote” prepared by Head Chef, Carlos Abad. Congratulations to Carlos, Marco and all the team at Tasca.

If you would like to try the winning Tapa, the restaurant will continue to offer this dish for a limited time only.

Zee Restaurant in Cala Estancia

We have recently gotten know Hilbert and Rosa, the team behind Zee Restaurant in Palma, where you’ll find some wonderful gastronomic surprises.

The couple combined their experience, knowledge and passion for food, after working side by side on a luxury yacht, to create their restaurant in Cala Estancia. Hilbert is a relatively well known chef and specialises in fusion cuisine with French, Dutch and Mediterranean influences.

Zee’s elegant and well appointed venue makes it ideal for events and group meals. It often hosts creative wine matching dinners and courses in collaboration with Wine Educators International, for people who are passionate about food and wine.

Wine Courses at Catavinos

The team at Catavinos Wine Store in the Poligono de Can Valero in Palma offers a different schedule of events every month, including workshops and courses about wine and how to combine it with food.

October is packed full of great events.
First up is the now regular Wine Tasting course which takes you through the basics of how to identify a good wine and of course how to enjoy it. This is a two day course and really gives you a great grounding into the world of wine, so if this has always been a passion of yours, and you would like to explore it further, this course is for you.

Also included this month are some great cookery courses with some very well known chefs. Tomeu Marti from Arume Restaurant will be running a Japanese cookery course, Jordi Calvache from D’Calvache Catering will be preparing a wine matching dinner and the chef from UMMO restaurant (3 times TaPalma winner) will be teaching his best tapas and pinchos tricks.

All courses are conducted in Spanish.
