Chef Javier Weil defines his cuisine as follows: ‘It’s a signature cuisine based on ideas and especially on flavours, using the freshest possible seasonal products. We aim to provide a modern, innovative presentation and fusion of flavours, without ever forgetting the origins of our Mediterranean cuisine: the olive oil, the vegetables and the ‘fruits of the sea’. We adapt dishes to clients’ needs, at the same time finding a perfect balance between quality and cost.’ Can Blau restaurant is found in the lovely Gran Hotel Soller, Mallorca.
