Guillermo Méndez is head chef at La Residencia, a luxurious and charming five star hotel in the picturesque town of Deià with poolside service at Son Fony and its gourmet restaurant El Olivo. Along with his professional team, Guillermo entices his clients to try new creations, as well as savour once again his star dishes – on the menu for more than 10 years! He explains: ‘We offer a signature cuisine with Mediterranean roots. My idea is to re-create the tastes that remind me of my childhood and the Mallorcan kitchen. We also use high quality imported products like foie gras, caviar etc, to add an international flair to local flavours.’
